It's that time of year! Holidays, family, get together's, snacking.... appetizers. Hard to find a healthy option in the mix of cream cheese, sweets and treats. Here is a great veggies appy!
I adapted this from the Kayotic Kitchen blog and actually had to "borrow" her picture for the final product because by the time we were serving and eating pictures had gone out the window!
Here's the run down...
1 tbsp low-fat sour cream
1/4 to 1/2 tsp salt
1/4 tsp curry powder
1 tsp thyme
Preheat the oven to 400 and wash up the zucchini.
So, I will be attempting this recipe again because the one thing that I learned is that it is best to cook this when your oven isn't dead. Yup, that's right, in the middle of baking these my oven died and I had to finish them on broil, so the zucchini didn't get as soft as it should have. But overall, it still tasted pretty good (and will be better the next time...lol...like actually cooked!)
