I hope you are all enjoying this beautiful summer, I sure am!!!
Well I am now back from my holidays and feel a sense of clarity after spending a number of weeks with my girls. I learned a few things about them & even more about myself while spending time with my extended family in Nova Scotia and on the Sunshine Coast with my parents. First, camping, swimming in the lake & paddle boarding are a great way to maintain balance. The time I spent on my paddle board cruising the lakes gave me the best opportunity to think & come up with new ideas for my business. Kenzie craves one-on-one time with me much more than I realized and I must make an effort to schedule our time together in the coming months. Madie is a show off and works on being the center of attention, all the time! A very important lesson I am reminded of every time I visit my uncle & aunt is to slow down & take time to chill! They live a life most could only dream of and I need to spend less, worry less and speak my mind more. I speak of balance in my programs & it is one of the most important things to work on as a busy mom, self-care cannot be pushed a side for the good of others. If we don't care of ourselves we WILL not be effective to those who depend on us. My self care will include adding swimming to my exercise routine, paddle boarding till there is ice on the lakes and not holding in my feelings.

I love to cook.... or at least most of the time...lol
I especially love cooking in the summer when there are so many options for local, fresh veggies. So here is one of my favorite, go-to recipes. It was adapted the Pioneer Woman recipe (also something that I love!...her site is awesome)
I came across her blog a few years ago when I first got into photography.... what is better than combining pictures and cooking! Anyways... her cooking includes a little too much butter and bacon for me to cook all the time, but I love her stuff, so I've been altering some of her recipes to make the a bit healthier. So for this recipe I changed out butter and bacon fat for a bit less olive oil and usually I use more veggies and less salt.
Here's the Fresh Green Bean Recipe
Usually you use red peppers, but the store had lots of local purple ones, so that's what we used this time. The kids also love the green beans raw.... so as I was cooking I was feeding them raw beans to leave me alone!
This is a simple recipe.... just saute the veggies and then add it the stock. To cook faster I pop a lid on to help steam things, but to start a bit of caramelization at the end I take the lid off. If the liquid evaporates too fast I just add more stock.
So in addition to these yummy beans we also had BBQ'd chicken legs because my kids will eat anything that they class as "meat on a bone" and then I made fresh spelt pasta. The recipe is part of the Cooking with Justine series from the last Mommy's Wellness Challenge, but I have a sneaking suspicion that it didn't ever get posted! So I'll share Justines pasta recipe and do my best to get the entire Lasagna recipe up on the blog eventually.
In a bowl measure out flour and salt. Combine and make a well in the middle of the flour. In a separate bowl, crack the eggs and add olive oil, whisk with a fork. Pour eggs into flour well, begin mixing together using a fork. Work until large clumps form. Dump out onto clean counter and begin to knead until dough comes together. Continue kneading until dough becomes elastic, a few minutes. Form a ball and cover with plastic wrap, let sit for at least 20 minutes.
I just rolled ours out and boiled it for a few minutes... I don't own a pasta maker and I had 5 hungry, cranky kids bugging me.... so don't judge the pasta making skills please!!
There are many reasons why I love Fit By Design....
First of all the amazing workouts. They are not only effective, but fun as well!
Secondly the group as a whole is just fantastic. The support and encouragement I have found in the Mommy's Wellness Workouts is a big part of my success! I have learned so much and it is benefiting my whole family.
I love watching my kids be active and now I don't have to just sit back and watch, I have the energy to keep up with them - most days :)
When I started with Sabrina's Mommy Wellness Bootcamps I had no idea what to expect. I was terrified at my ability to be able to keep up with the rest of the group as I had not done much exercise since the birth of my daughter, nine months earlier. I was feeling very tired and did not think that doing strenuous exercise would help me with my energy level. I thought I just needed more sleep. Dealing with two young children at home made it hard to fit in exercise.
I decided that I needed to make time for ME.
I was going to commit to a class twice a week for my own health.
What did I have to lose?
Before my first class I was nervous and wondering if I would be able to handle meeting all the other members of the class that had been there much longer than I. I knew I was not coordinated at all and felt like I would look like a 'fool' doing all of the exercises.
What I came to realize was:
- there were many moms of all shapes and sizes in the class and everyone was there for their own HEALTH
- It did not matter that I was not coordinated, movement is change, and change is good!
- All the kids in the child care were having fun and the caregivers were amazing.
- it was a community of moms that can all relate to one another is some way.
- I could actually do the exercises, even though I needed to modify them for my level!
- It is a great way to make time for myself, not thinking about anything but making my body feel better, no matter my shape or size.
- Exercise made me MORE energetic!!!
- I felt HAPPY and CONTENT after every class!
My initial fears, that were put at ease....
- this class is NOT a competition
- there is no one judging me and my abilities
Really, what more can I say? I'm addicted! What's not to love about being amazed at what my body is capable of?!?
When I was in your mommy's class I was really focused and motivated on bettering my own health and wellness. Now that I am no longer in that particular class I have a new view of what it is you actually do for people, not just me :) I read posts from your mommy page pretty often and see how some of these women have come so far!
You provide them a place to get healthy, meet other mom's and do it all with their children. You have also provided them with a mentor and a friend. You are an inspiration to a lot of people and hope you realize it. Your class allows many people to accomplish things they never thought possible.
You are like a drug and they are addicted!
When you were on holidays I saw many women keeping up their posts and counting the days til the next class. You have shown these women that working out and being healthy is fun and not always a drag. You have taught us to go at our own pace and that someone is always gonna be better/faster than you so the only person you should compete with is yourself!
Keep up the good work friend! You truly are amazing and I am lucky to have met you and have you in my life :)
